CHOCOLATE ECLAIRS
Ingredients:
- 1 c flour
- 1/4 tsp salt
- 1 c boiling water
- 4 pcs eggs
- 1/2 c shortening (at least half butter)
Instructions:
- Preheat oven to 400 deg F.
- Sift flour and measure; add salt and sift again.
- Combine shortening and boiling water in same pan. Keep over low heat until butter is melted.
- Add flour all at 1 time; stir vigorously over low heat until mixture forms a ball and leaves side of the pan.
- Remove from heat.
- Add unbeaten egg 1 at a time, beating thoroughly after each addition; continue beating until thick dough is formed.
- Force through a decorating tube unto greased baking sheet in strips about 1-inch wide and 4-in long.
- Bake for about 25 mins.
CREAM FILLING
Ingredients (makes enough filling for 3-layer cake or Boston cream pie):
- 2/3 c sugar
- 5 tbsp flour
- 1/4 tsp salt
- 2 c milk
- 2 pcs eggs (or 4 yolks), slightly beaten
Instructions:
- Combine dry ingredients in top of double boiler; stir in milk gradually.
- Cook over boiling water until thickened, stirring constantly.
- Cover and cook for 10 mins (or slightly longer) stirring occasionally.
- Stir a little of the hot mixture into slightly beaten eggs or egg yolk; slowly stir in remaining hot mixture.
- Cook over hot (not boiling) water for 2 mins, stirring constantly.
- Chill.
- Add vanilla.
