OATMEAL CRISPS
Ingredients (makes 3-4 doz cookies):
- 1 c sugar
- 1.4 c shortening
- 2 pcs eggs, well-beaten
- 1 tsp vanilla extract
- 2 c rolled oats
- 2 tsp baking powder
- ¾ tsp salt
Instructions:
- Cream sugar and shortening
- Add well-beaten eggs and vanilla extract; blend thoroughly
- Combine rolled oats, baking powder and salt; add to creamed mixture and mix well
- Drop by tsp 2-3 inches apart onto greased baking sheet
- Bake in a moderate oven at 370 deg F for about 10 mins
- Remove from pan at once to prevent breaking.
